Stuffed Causa

Eight servings.
Ingredients:
2 kilos of yellow potato
4 key limes
5 green or yellow hot peppers
3 ounces of vegetable oil
salt
320 gr of chicken breast
625 gr avocado
320 ml mayonnaise
8 black olives
3 hard-boiled eggs for garnish
1/4 bunch of curly parsley
1 small, red pepper
To Prepare:
Boil yellow potatoes, while still hot, pass three times through potato masher.
Parboil the hot pepper previously peeled and de-seeded. Mix in blender with oil.
Add to the mashed potatoes when warm. Add salt, pepper and key-lime juice; if needed, add a little more oil.
Knead until smooth and compact.
Boil chicken, drain and finely chop. Mix with mayonnaise.
To serve:
Place a round layer of potato mix on dish; cover with chicken and mayonnaise stuffing.
Add small rounds of avocado.
Cover with a second layer of potato mix.
Garnish with mayonnaise, grated egg, ½ black olive, 2 rings of red pepper and a sprig of parsley.
