To Prepare:

Season the 6 filets of fish with salt and pepper, coat with flour and fry.

Prepare a seasoning with the onions, garlic, all the coral, ground oregano, sprig of black mint, salt and Aji-no-moto; add the ají panca (or mirasol), or better still, a mixture of both; add the white wine and let sit until alcohol evaporates. Only then add the shrimp stock * (very concentrated).

Bring to a boil and add the corncobs (cut into 6 slices), the peas, yellow potatoes, green cheese in pieces, and the cream of milk and bring to a boil. Add the shrimp tails raw but with salt.

Place in each soup dish: 1 filet of fried fish, the stock with all its ingredients, and garnish with 1 poached egg (poached in water and vinegar), 1 whole shrimp fried in oil, and yellow pepper, fried and sprinkled with coriander and parsley.

*Shrimp Stock:
Sauté in 2 tablespoons of butter the shells and heads from the 2 kilos of shrimp, add the coral, 700 grams of chopped vegetables (carrot, onion, leek and celery).

When golden brown, add 1 tablespoon tomato paste, stir well and then add 1 tablespoon of flour and 1 glass of white wine, and let sit until alcohol evaporates, and complete with 1.5 liters of fish stock prepared with the heads and spine of the fish.

First bring to a boil at maximum heat and then bring down to minimum and simmer for 30 minutes. Should reduce to 1 liter.

Strain, crushing the heads in the colander to bring out the entire flavor and add to the Chowder.
Shrimp Chowder

Ingredients:

2 kilos of shrimp + 6 whole shrimps
8 small filets of corvina
2 tender corncobs (choclo serrano) (cooked)
2 red onions
2 tablespoons ground garlic
2 tablespoons ají panca
100 grams green peas
1 kilo yellow potatoes (cooked)
200 grams green cheese (queso fresco)
200 grams rice (boiled)
6 eggs
½ liter cream of milk (crema de leche)
Coral from all the shrimps
1 liter concentrated shrimp stock
½ glass white wine
1 sprig black mint
Salt
Aji-no-moto or monosodium glutamate
Oregano
1 cup plain flour
