Pisco Sour

Method: Beat.
Function: appetizer.
Glassware: Kero Glass.

4 ounces Pisco Puro Quebranta.
1 ounce key lime or lemon juice.
1 ounce simple syrup.
1/8 ounce egg white.
4 ice cubes.
3 drops of bitters. (Amargo de Angostura)

Put the glass on the correct temperature. (With ice)
In a cocktail mixer add all ingredients in the following order:
Pisco Quebranta, key lime or lemon juice, simple syrup, egg white and ice.
Shake the mixer at slow pace for between 8 to 12 seconds.

Pour the mix in the glass, using a twisted strainer.

Decorate with 2 or 3 drops of bitters.
