Algarrobina Cocktail
Serves 15 glasses

INGREDIENTS:
1 cup evaporated milk.
1 cup pisco.
4 eggs.
6 tablespoons sugar.
1 1/2 teaspoon algarrobina (extract of carob).
1 teaspoon ground cinnamon.


TO PREPARE:
Beat egg whites into peaks, add yolks, carob, milk, pisco and sugar, beating all the while.

When well mixed, place in refrigerator until well cooled.

Serve with a little cinnamon.
